Low Carb Pumpkin Muffin Recipe

My friend Sondra at work gave me this recipe, but I’ve changed it to make it lower carb since she is paleo and I’m just keto.

1. 5 cups almond flour (from Trader Joe’s)

3/4 cup canned pumpkin

3 eggs

1 tsp baking soda

1 tsp baking powder

1/2 tsp ground cinamon

1/4 tsp ginger

1/4 tsp nutmeg

1/8 tsp allspice or cloves

1/8 tsp salt

1/2 cup splenda

1/8 cup raw honey (I used my dad’s honey, also this is optional, honey is pretty high carb, if you’re really low carb definitely just use the splenda)

2 T almond, peanut, or cashew butter

2 T sliced almonds

Put everything in a bowl, mix it together. Don’t overmix. Put in a muffin pan (this makes 12 muffins) and bake at 350 degrees for 15-20 minutes. Be careful, they burn pretty fast because they’re so moist!
